- 1 tsp vanilla extract
- 200 g white chocolate, chopped
Instructions
- Preheat oven to 350°F and line baking sheets with parchment paper.
- Whisk together flour, baking soda, and salt in a mixing bowl.
- In another bowl, cream butter and both sugars until light and fluffy.
- Add the egg, yolk, maple syrup, and vanilla. Mix until smooth.
- Gradually fold in the dry ingredients until just combined. Don’t overmix.
- Scoop dough into tablespoon-sized balls and place them 2 inches apart.
- Bake for 10–12 minutes until edges are golden and centers soft.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
- Melt white chocolate gently over a double boiler until glossy.
- Dip each cookie halfway into the chocolate and let excess drip off.
- Place dipped cookies on parchment and let chocolate set at room temp.
- Store in an airtight container with a paper towel to absorb moisture.
