Hallongrottor, also known as Swedish cookies with jam, are buttery shortbread-style cookies filled with sweet raspberry jam. Ingredients

200g (7 oz) unsalted butter, softened

90g (3.2 oz) granulated sugar

1 tsp vanilla extract

265g (9.3 oz) all-purpose flour

1 tsp baking powder

70g (2.5 oz) raspberry jam (seedless preferred)
Instructions

Cream the Butter & Sugar
In a large bowl, beat the softened butter and sugar until pale and fluffy, about 3 minutes. -
Add Vanilla
Mix in vanilla extract until fully incorporated. -
Add Dry Ingredients
In a separate bowl, whisk together the flour and baking powder. Slowly combine with the butter mixture until a soft dough forms. Do not overmix. -
Chill Dough
Wrap dough in plastic wrap and refrigerate for 30 minutes to firm up. -
Preheat Oven
Set oven to 180°C (356°F). Line a baking tray with parchment paper. -
Shape the Cookies
Roll dough into 12 small balls. Place them on the baking sheet and press a thumb or spoon into each center to create an indentation. -
Fill with Jam
Spoon ½ tsp of raspberry jam into each indentation. Don’t overfill to avoid overflow. -
Bake
Bake for 12–15 minutes or until the edges are lightly golden and the centers remain pale. -
Cool and Serve
Allow cookies to cool on the baking tray for 5 minutes before transferring to a wire rack.
