Description

Hallongrottor, also known as Swedish cookies with jam, are buttery shortbread-style cookies filled with sweet raspberry jam. These charming Scandinavian treats are easy to make, irresistibly tender, and perfect for winter baking, fika afternoons, or festive cookie platters. Their delicate texture and fruity center make them a nostalgic favorite.

  • 200g (7 oz) unsalted butter, softened

  • 90g (3.2 oz) granulated sugar

  • 1 tsp vanilla extract

  • 265g (9.3 oz) all-purpose flour

  • 1 tsp baking powder

  • 70g (2.5 oz) raspberry jam (seedless preferred)


Instructions

  • Cream the Butter & Sugar
    In a large bowl, beat the softened butter and sugar until pale and fluffy, about 3 minutes.

  • Add Vanilla
    Mix in vanilla extract until fully incorporated.

  • Add Dry Ingredients
    In a separate bowl, whisk together the flour and baking powder. Slowly combine with the butter mixture until a soft dough forms. Do not overmix.

  • Chill Dough
    Wrap dough in plastic wrap and refrigerate for 30 minutes to firm up.

  • Preheat Oven
    Set oven to 180°C (356°F). Line a baking tray with parchment paper.

  • Shape the Cookies
    Roll dough into 12 small balls. Place them on the baking sheet and press a thumb or spoon into each center to create an indentation.

  • Fill with Jam
    Spoon ½ tsp of raspberry jam into each indentation. Don’t overfill to avoid overflow.

  • Bake
    Bake for 12–15 minutes or until the edges are lightly golden and the centers remain pale.

  • Cool and Serve
    Allow cookies to cool on the baking tray for 5 minutes before transferring to a wire rack.

Jam Options: Substitute raspberry with lingonberry, cherry, or apricot preserves.
