These Lucky Charms cookies are soft, chewy marshmallow cookies packed with colorful cereal pieces and mini marshmallows. Perfect for holidays and parties, this recipe keeps cookies thick while mastering baking with marshmallows correctly.
Ingredients
2 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 cup unsalted butter, softened
1 cup brown sugar, packed
½ cup granulated sugar
1 large egg
2 teaspoons vanilla extract
2 cups Lucky Charms cereal
1 cup mini marshmallows
Extra mini marshmallows for topping
Instructions
1. Preheat oven to 350°F and line baking sheets with parchment paper.
2. Whisk flour, baking soda, and salt together.
3. Cream butter and sugars for 3 minutes until fluffy.
4. Add egg and vanilla. Mix until combined.
5. Add dry ingredients and mix just until incorporated.
6. Fold in cereal and mini marshmallows gently.
7. Chill dough 30 minutes.
8. Scoop dough onto baking sheets.
9. Bake 9–11 minutes until edges are set.
10. Cool 5 minutes before transferring.
Notes
Do not overmix after adding marshmallows.
Chilling prevents spreading.
Store in airtight container 4 days.
Freeze dough up to 2 months.
