- 1 ½ cups (300g) granulated sugar
- ¾ cup (75g) unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup (240ml) milk
- ½ cup (120ml) vegetable oil
- 2 eggs
- 2 teaspoons vanilla extract
- 1 cup (240ml) boiling water
For the Chocolate Ganache:
- 1 cup (240ml) heavy cream
- 8 oz (225g) dark chocolate, chopped
- 1 tablespoon butter
For Decoration:
- 1 to 2 cups Smarties (or M&Ms)
Instructions
-
Preheat Oven & Prepare Pans:
- Preheat your oven to 350°F (175°C).
- Grease and line two 8-inch (20cm) round cake pans with parchment paper.
-
Make the Cake Batter:
- In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add milk, vegetable oil, eggs, and vanilla extract. Mix until combined.
- Gradually stir in boiling water (the batter will be thin, but this makes the cake moist!).
-
Bake the Cakes:
- Divide the batter evenly between the two prepared cake pans.
- Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
-
Prepare the Ganache:
- Heat heavy cream in a saucepan over medium heat until it starts to simmer (do not boil).
- Remove from heat and pour over chopped dark chocolate. Let sit for 2 minutes, then stir until smooth.
- Stir in butter for extra shine. Let cool slightly until spreadable.
-
Assemble the Cake:
- Place one cake layer on a serving plate and spread a layer of ganache on top.
- Add the second cake layer and cover the entire cake with the remaining ganache.
-
Decorate with Smarties:
- While the ganache is still soft, press Smarties onto the top and sides of the cake in a fun pattern.
-
Chill & Serve:
- Refrigerate for 30 minutes to set the ganache.
- Slice and enjoy your delicious Chocolate Smarties Cake!
Notes
- You can use rainbow M&Ms or any other colorful chocolate candies instead of Smarties.
- For an extra rich flavor, add espresso powder (1 teaspoon) to the cake batter.
- Store in an airtight container at room temperature for 2 days or in the fridge for up to 5 days.
