Chocolate Smarties Cake

A Chocolate Smarties Cake is the ultimate fun and colorful dessert! This moist and rich chocolate cake is topped with a smooth chocolate ganache and decorated with vibrant Smarties, making it perfect for birthdays, celebrations, or any time you crave a sweet treat.

For the Chocolate Cake:

  • 2 cups (250g) all-purpose flour
  • 1 ½ cups (300g) granulated sugar
  • ¾ cup (75g) unsweetened cocoa powder
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (240ml) milk
  • ½ cup (120ml) vegetable oil
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 cup (240ml) boiling water

For the Chocolate Ganache:

  • 1 cup (240ml) heavy cream
  • 8 oz (225g) dark chocolate, chopped
  • 1 tablespoon butter

For Decoration:

  • 1 to 2 cups Smarties (or M&Ms)

Instructions

  • Preheat Oven & Prepare Pans:

    • Preheat your oven to 350°F (175°C).
    • Grease and line two 8-inch (20cm) round cake pans with parchment paper.
  • Make the Cake Batter:

    • In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
    • Add milk, vegetable oil, eggs, and vanilla extract. Mix until combined.
    • Gradually stir in boiling water (the batter will be thin, but this makes the cake moist!).
  • Bake the Cakes:

    • Divide the batter evenly between the two prepared cake pans.
    • Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
    • Let cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  • Prepare the Ganache:

    • Heat heavy cream in a saucepan over medium heat until it starts to simmer (do not boil).
    • Remove from heat and pour over chopped dark chocolate. Let sit for 2 minutes, then stir until smooth.
    • Stir in butter for extra shine. Let cool slightly until spreadable.
  • Assemble the Cake:

    • Place one cake layer on a serving plate and spread a layer of ganache on top.
    • Add the second cake layer and cover the entire cake with the remaining ganache.
  • Decorate with Smarties:

    • While the ganache is still soft, press Smarties onto the top and sides of the cake in a fun pattern.
  • Chill & Serve:

    • Refrigerate for 30 minutes to set the ganache.
    • Slice and enjoy your delicious Chocolate Smarties Cake!

Notes

  • You can use rainbow M&Ms or any other colorful chocolate candies instead of Smarties.
  • For an extra rich flavor, add espresso powder (1 teaspoon) to the cake batter.
  • Store in an airtight container at room temperature for 2 days or in the fridge for up to 5 days.
