Ingredients
wheat flour
Unsweetened cocoa powder
Concentrated pastry butter
Sugar
Dark chocolate 43%
Milk or water
Salt
Instructions
1. Sift flour, cocoa, and salt into a bowl.
2. Whisk with sugar and liquid until thin and smooth.
3. Let the batter rest 30 minutes.
4. Heat nonstick pan over medium.
5. Pour small amount, swirl to thin.
6. Cook until edges crisp, flip briefly.
7. Cool on rack to firm.
8. Brush with melted dark chocolate, roll and serve.
Notes
Store in airtight container in cool, dry place. Refresh in oven if needed. Best enjoyed within one week.
