For the Banana Cake:

  • 1 ½ cups (190 g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup (115 g) unsalted butter, softened
  • ¾ cup (150 g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 ripe bananas, mashed
  • ½ cup (120 ml) buttermilk (or milk with 1 teaspoon lemon juice)
  • ¾ cup (90 g) chopped walnuts

For the Chocolate Ganache:

  • 1 cup (170 g) dark chocolate chips or chopped chocolate
  • ½ cup (120 ml) heavy cream

Topping (Optional):

  • Extra chopped walnuts
  • Banana slices
  • Chocolate shavings

Instructions

  • Preheat & Prepare:
    Preheat the oven to 350°F (175°C). Grease and line an 8-inch (20 cm) round cake pan with parchment paper.

  • Mix Dry Ingredients:
    In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

  • Make the Batter:
    In a large mixing bowl, cream the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. Add the mashed bananas and mix until combined.

  • Combine Ingredients:
    Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk. Fold in the chopped walnuts.

  • Bake the Cake:
    Pour the batter into the prepared pan and smooth the top. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely in the pan.

  • Prepare the Chocolate Ganache:
    Heat the heavy cream until just simmering. Pour over the chocolate and let sit for 2 minutes. Stir until smooth and glossy.

  • Frost the Cake:
    Once the cake is completely cool, spread the ganache evenly over the top.

  • Decorate & Serve:
    Garnish with extra walnuts, banana slices, or chocolate shavings if desired. Slice and enjoy!
